Creamy Tuscan Chicken

This creamy tuscan chicken is so easy to make and can be scaled up for larger portions. It's my take on the "marry me chicken" recipes that are popular online.
Ingrediants
1 chicken breast
heavy cream
butter
beef stock or beef broth
garlic
optional: sundried tomatos and spinach
dijon mustard
parmsean cheese
olive oil
paprika
cumin
garlic power
onion powder
salt
black pepper
herb seasonings
Instructions:
Start by seasoning your chicken by coating both sides in salt and pepper
2. In a small bowl or ramekin, mix 1 teaspon each of paprika and herb seasoning and 1/2 teaspoon cumin and minced garlic powder
3. In a pan, add 2 tbs olive oil and bring up to medium low heat
4. Cook chicken on both sides for 6-8 minutes or until the internal temperature has reached about 145 degrees (F)
5. Remove chicken from pan
6. Mince two cloves of garlic and 1 tbs butter, add to residual oil in the pan and sautee until lightly golden brown. Adjust heat as needed
7. Add 1 tbs of dijon mustard
8. Add 1/2 cup beef stock
9. Stir to combine
10. Add 1/2 cup of heavy cream and stir
11. Freshly grate 1 cup parmsean cheese
12. Mix in a teaspon of each seasoning used for the chicken and add any additional salt if needed
13. At this point, you can add sundried tomatos and spinach if you want to
14. Put chicken back into the pan and let simmer in the sauce until the internal temperature has reached 165 degrees
15. Remove from heat and slice chicken, spoon sauce over chicken and top with parsley and more parmsean
Tips
I like to serve this dish over mashed potatos but a side of any vegetables like carrots and zuchinni would also work
Any extra sauce can be saved in the fridge
If you dont have parmsean cheese, peccorino romano would also work but I prefer parmsean because it is less salty
Purchase a meat thermometer. If you're new to cooking or intimdated by meat, a thermometer is a great way to make sure your chicken/fish/beef is not under/over cooked
Seasoning the chicken in advance or cooking halfway to meal prep
